Quinoa Breakfast Bowls

With our garden going full-throttle, we have a ton of basil at the ready, which means lots of pesto!  Picking all of the leaves off of the stem can be a time-consuming process, so when I make pesto I try to make a LOT so I can get more than one meal out of it.  So bring on the flavors of summer with this bowl!  It's gluten and dairy-free, so it will please pretty much anybody.  Just a note:  unless you have the pesto and quinoa already made, this recipe does NOT take ten minutes.  Also, feel free to add or substitute any veggies you like!
