Gluten-Free Chocolate Chip Cookies
If you're like me, if you hear the words "gluten-free baking", your first impression is, "no thanks, I'm good." I stumbled across this recipe when I was looking for some baked goods to make for my GF stepdaughter over the holidays. And let me tell you my friends, it's GOOD. No, for real. I have baked these cookies for a crowd, and people have told me that they're the best chocolate chip cookies they've ever had. That's a bold statement, my friends. (Note: I didn't even tell them they were GF!)
I usually follow this recipe to a T and the cookies come out kinda flat (still delicious though). This time I reduced the butter to 6 oz and they were perfect! (Note: I can never find brown rice flour so I just use regular-ol' rice flour.)
So give them a try--either fresh out of the oven or *shudders* cold, they're delicious!
