Mediterranean Shrimp
I went to make this last week and realized halfway through that I didn't have some of the ingredients. Ooops! It helps to plan ahead. BUT, despite my tweaks, it turned out really good--the only question is, do I try the recipe as is next time, or just make it my way? Here's what I changed--if you make this, tell me which route you took!
Jane's modifications:
fresh tomatoes for canned
roasted red peppers instead of artichoke hearts
omitted parsley (because I didn't have any)
