Chicken Buddha Power Bowls
I could've sworn that I already posted this recipe, but I couldn't find it in my archives. So, here we go (again?). My next-door neighbors passed this recipe along, and I make it pretty regularly.
What makes something a "Buddha Bowl"? Buddha bowls typically consist of a grain, a protein, lots of veggies, and a sauce. They tend to be vegan, but in reality they just need to look pretty for your Instagram feed. And why Buddha? No one really knows, so my guess is marketing.
With all that being said though, I really enjoy this one! You can put whatever you want in this bowl...the key is really the dressing. (I like how it incorporates carrots.) I typically swap out greek yogurt for the mayo in the garlic aioli for less fat and extra protein., and I always try to add more vegetables if I can.
