Avocado Pasta Salad
I've been trying a handful of new recipes, and this one actually came off of Instagram (from @healthyfoodyess and @janetsmunchmeals). Did you know how annoying it is to follow a recipe from IG? Answer: very annoying. However, this pasta recipe was worth it. At first I thought it was a bit weird to add cucumber to a pasta, but then I realized this is really more of a pasta salad. Whatever you call it, it's fantastic and you should definitely try it. (I've made it twice in one week already!)
Here's the recipe so you don't have to make your eyes bleed looking at your tiny glowing screen. Unless of course you're reading this on your phone, in which case...
Ingredients:
1/2 lb. pasta of your choice
1 3/4 c. thinly sliced seedless cucumber
1 pint cherry tomatoes, quartered
1/4 c. finely chopped red onion
2 tbsp packed fresh parsley, chopped
Dressing
2 avocados
Juice of 1 lemon
1 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1/4 tsp chili flakes
1/4 cup (packed) fresh parsley
2 tbsp (packed) cilantro
Cook pasta according to directions. Let cool slightly, add remaining ingredients and stir.
Process dressing ingredients in a blender or food processor until smooth. Stir into other ingredients.
