Tofu and Leek Stir Fry

Although this dish is delightful, I have one qualm with it.  The recipe states that it can be cooked in 15 minutes, but I have never been able to prepare it in that amount of time.  To be fair, I press my tofu, which takes about 25 minutes alone.  The author doesn't state to do that here, so maybe you can skip it?  (Tofu experts can weigh in on this.)

The other thing you need to remember is:  start the pot of water to boil BEFORE you do anything else.  Twice now I've made the recipe and got to, "add the noodles to boiling water" and thought, "well, crap."  

DESPITE these temporal pitfalls, it's still a great weeknight dish that can come together in more like 30 minutes.  And feel free to swap out the noodles for a gluten free version if necessary!
