Salmon Tacos

Do you ever make recipes from Instagram? I have tried quite a few now and have found a couple of gems including this one.  This recipe is from the profile starinfinitefood and although it's really delicious, making it was a total pain in the ass because I had to screenshot the recipe as it flashed across the screen.  So as a public service, I'm going to type it out below so that you don't have to make your eyes bleed like I did.

Notes: The salmon rub is what makes this dish so amazing.  To be honest, I'm not crazy about the ranch avocado spread...I would personally just leave the ranch out and I think it would be great, but I'll print the whole recipe and you can choose your own adventure.  But trust me, the salmon is REALLY good!

Ingredients:  
1 lb salmon
1 tbsp olive oil

Spice mix for salmon:
1 tbsp tajin
1 tbsp coconut sugar
2 tsp oregano
1 tsp garlic powder
1/4 tsp salt

Avocado [Ranch] Spread:
1 ripe avocado
1/2 head parsley or cilantro
1/2 cup Greek yogurt (or sour cream)
2 tbsp mayonnaise (I actually didn't like it with mayo but that could just be me)
2 tbsp ranch dressing (again, I would skip, but you do you)

Tortillas
Red cabbage 
Other veggies (tomatoes, peppers, etc) for garnish

Preparation:
1) Preheat oven to 450
2) Pat the salmon dry, cover with the olive oil and coat with the seasoning (you want a thick crust on top)
3) Bake salmon for 10-12 minutes, then cook for 1-2 minutes under the broiler
4) While the salmon is baking, combine the avocado spread ingredients in a food processor until smooth
5) While the salmon is cooking, prep the tortillas
6) When salmon is ready, slather avo spread on each tortilla, add some salmon to each shell, then top with cabbage and anything else you like
