Loquat Avocado Salad and Salsa

I'm lucky enough to a have a friend with a loquat tree who needs help getting rid of them.  Please note that I am always willing to take unwanted homegrown produce off your hands.  

Loquats are about 1-2 inches long and tend to be orangey-yellow when ripe (at least for this variety).  Each fruit contains one or two brown seeds--don't eat those!  Wikipedia describes the fruit flavor as "floral, with hints of apricot and peach."  

A lot of recipes use loquats for jams or sweets, but I dig more savory dishes too.  I made this recipe last night and it was pretty simple.  The recipe suggests halving the loquats but I think I'd prefer them chopped up a little more for a more even texture for the salad. (Okay, they call that a salsa, whatever.)

And if you're not lucky enough to have loquats, try with apricots or peaches instead.
