Jade Noodles
I've been trying out vegan and vegetarian recipes lately for no good reason other than I needed something different in my life. A lot of the recipes have been for some kind of grain bowl: rice bowls, farro bowls...while a lot of them weren't bad, most of them were just...pretty boring. But I finally found a winner with this bowl o' Jade Noodles. It basically uses any green vegetable or herb you can think of. The sauce is a light Asian-inspired flavor that while I doubt is authentic in any way, is delightful and could pretty much be poured over anything you like.
Some notes: I reduced the oil in the recipe to a 1/4 cup just 'cause. Also, if you want to be 100% gluten-free, you need to make sure your soba noodles are 100% buckwheat...a lot of soba is actually a mix of buckwheat and regular wheat.
This makes a TON, so enjoy it for dinner and then for lunch the next day! (Or for breakfast because I couldn't wait.)
