Chicken Shawarma Pita
Mad props to my client Jane for passing along this recipe. This was so good, I ate two for lunch the other day! The combination of the yogurt sauce, the chicken spice rub, mint and pickled onions was a knockout--it will definitely be on repeat for the summer! They're called "swaddled" because you put them in a pita. Not crazy about the idea of swaddling poultry--I get visions of wrapping a rooster in a blanket--but the recipe is so good I'll forgive it its weird title.
