Chicken and Rice, Ooh So Nice!

I get bored easily, so I am always on the lookout for new recipes.  This week I combined an old favorite (Mexican Rice) with a new one (Peruvian-style Chicken). Now I make no claims as to how authentic these recipes are, BUT I can tell you two things:

1) The 2nd time I made the rice recipe I used brown rice (I had run out of white rice)--I do NOT recommend.
2) The green sauce AND the marinade on the Peruvian chicken are awesome!  The author uses the green sauce as a salad dressing, but I could see you putting it on almost anything.  (Okay, maybe not ice cream.)
Also, I subbed out the mayo for more greek yogurt because that's how I roll.  

So make them separately, or try them together like I did, and you will have a happy stomach.
